Buy, Store & Prepare

Buying and Storing

Look for springy, fresh-looking sprouts with no sign of mould, discoloration or limpness. Avoid those with any slimy feel to them. The mung bean variety should be particularly crisp - check by snapping one.

They should be eaten as soon as possible, but may be stored for a day or two in the refrigerator at 36° to 40°F (2° to 4°C).


Preparing and Using

Rinse thoroughly and drain.

Use raw in salads, sandwiches or as a garnish. They can also be cooked, but only briefly, in stir-frys, dressed oriental and south Asian noodle dishes and oriental broths.
