Rutabaga Souffle

Turn this old favourite into a "dressed-up" casserole fit for company, but cooked the fast Microtimesaver way. Cooking Ontario Rutabaga in the microwave makes peeling a cinch!

Ingredients:
  • 1 unpeeled medium Ontario Rutabaga (about 1 lb/500 g)
  • 1 tbsp (15 mL) granulated sugar
  • ½ tsp (2 mL) salt
  • 2 eggs
  • 2 tbsp (25 mL) butter
  • ½ tsp (2 mL) grated orange rind
Preparation:

Pierce 1 unpeeled medium Ontario Rutabaga (about 1 lb/500 g) in several places. Cover with plastic wrap, place on several sheets of paper towelling in microwave oven. Cook on High for about 10 to 15 minutes or until knife inserts easily. Let stand 5 minutes. Cool slightly; peel and cut into small chunks.

In food processor, puree rutabaga, 1 tbsp (15 mL) granulated sugar, ½ tsp (2 mL) salt, 2 egg yolks, 2 tbsp (25 mL) butter and ½ tsp (2 mL) grated orange rind until smooth.

Beat 2 egg whites until stiff; fold into rutabaga mixture. Turn into 4 cup (1 L) casserole dish. Cover and cook on Medium for 4 to 5 minutes until heated through.
