Potato Salsa Salad
In this unusual updated version of potato salad, the potatoes are tossed in a light refreshing salsa.

Ingredients:
- 2 lb (1 kg) Ontario Round Potatoes
- 6 large leaves Ontario Red Leaf Lettuce
- 1 Ontario Tomato, diced
- 2 tbsp (25 mL) finely chopped Ontario Green Onions
- 1/2 cup (125 mL) diced Ontario Cucumber
- 1/2 cup (125 mL) diced Ontario Red Pepper
- 1/2 cup (125 mL) diced Ontario Celery
- 1/3 cup (75 mL) chopped cilantro
- 2 tbsp (25 mL) lemon juice
- 1/4 cup (50 mL) olive oil
- 1/4 tsp (1 mL) hot pepper flakes
- 1 garlic clove, minced
- 1/2 tsp (2 mL) salt
- 1/4 tsp (1 mL) pepper
- 1 cup (250 mL) vegetable or tomato juice
Salsa:
Preparation:
In large pot of boiling salted water, cook potatoes, (unpeeled) until tender. Drain and cut each potato into 8 wedges. Set aside.
Salsa: In large bowl, combine tomato, green onions, cucumber, green pepper, red pepper, celery, parsley and cliantro. Set aside.
In tightly sealed container or glass jar, shake together lemon juice, olive oil, hot pepper flakes, garlic, salt, pepper and vegetable juice. Pour over vegetables and toss to combine. Chill.
Toss potato wedges with salsa. Serve in lettuce-lined bowl or on individual lettuce-lined plates. Chill until ready to serve.
