Grilled Greek Potato Salad

  • 3 or 4 Ontario Potatoes
  • Salt and Pepper
  • Olive Oil
  • Dried Oregano
  • Feta Cheese
  • Black Olives
  • Chopped Green Onions
  • Ontario Greenhouse Tomatoes
  • Ontario Greenhouse Lettuce
Preparation:

Here's a new twist on a favourite salad. Cut 3 or 4 Ontario Potatoes in half. Simmer in salted water until barely tender. Drain and cool completely. Cut into 1/2-inch (1 cm) thick slices. Brush lightly with olive oil; sprinkle lightly with dried oregano, salt and pepper. Grill, turning occasionally, over a medium heat until hot. Toss with thick wedges of Ontario Greenhouse Tomatoes, crumbled feta cheese, black olives and chopped Green Onions. Serve on a bed of Ontario Greenhouse Lettuce.
