Serve this Hungarian stew, colourful with Ontario tomatoes and peppers, over rice or noodles for a quick family meal. For a spicier taste, substitute some hot Ontario peppers.

Servings: 4 to 6
Ingredients:
  • 2 tbsp (25 mL) vegetable oil
  • 1 large Ontario Onion, halved and sliced
  • 4 Ontario Tomatoes, chopped
  • 2 Ontario Sweet Green Peppers, sliced
  • 1 clove Ontario Garlic, crushed
  • 1 tsp (5 mL) paprika
  • 8 oz (250 g) smoked sausage, chopped
Preparation:

In large saucepan or Dutch oven, heat oil over medium-high heat. Stir in onion; cook, covered, until softened, about 5 minutes. Stir in tomatoes, green peppers, garlic, paprika and smoked sausage; simmer, covered, for about 10 minutes or until vegetables are tender.
