Caramelized Onion and Pear Flatbread
Caramelized onions, ripe pears, walnuts and aged Cheddar make a classic flavour combination, perfect to top your favourite flatbread. Try this on prepared pizza crust, naan bread or Greek pita bread. For an upscale appetizer, just before serving, shave some dark chocolate over the top and enjoy with a glass of Ontario wine.
Cooking Time: 15 to 20 Minutes / Baking Time: 10 to 13 Minutes
Servings: Makes 1 flatbread or 16 pieces
Ingredients:
- 4 tsp (20 mL) olive oil
- 3 Ontario Cooking Onions, thinly sliced (about 3 cups/ 750 mL)
- 2 tsp (10 mL) granulated sugar
- 1/4 tsp (1 mL) salt
- 1 flatbread (about 12 x 9 inches (30 x 23 cm)
- 1 Ontario Pear, cored and thinly sliced
- 1/3 cup (75 mL) coarsely chopped walnuts
- 1/2 cup (125 mL) 1 tsp (5 mL) crumbled aged white Cheddar
- Pepper
- 1 tsp (5 mL) finely chopped fresh parsley (optional
Preparation:
In large skillet, heat oil over medium heat. Add onions and cook for 5 minutes, stirring occasionally. Stir in sugar and salt; cook stirring frequently, until onions are softened and rich golden brown, 10 to 15 minutes, reducing heat if browning to quickly. (Onions can be cooled, covered and refrigerate for up to 2 days. Return to room temperature to continue.)
Place flatbread on baking sheet; spread with caramelized onion. Top with pear, walnuts and cheese; sprinkle with pepper to taste. Bake in 400˚F (200˚C) oven for 10 to 13 minutes or until cheese is bubbly. Let stand for 4 minutes before cutting. Top with parsley (optional).
Tip: These caramelized onions are great as a side dish with roasted meats, added to mashed potatoes or as a filling for quiche or omelet. They are also, delicious served warm on crostini or as a pizza topping.
