Ingredients:
- 2 hard-cooked eggs, chopped
- 1 cup (250 mL) chopped Ontario Iceberg or Romaine Lettuce
- 1 cup (250 mL) shredded Ontario Carrots
- 1/2 cup (125 mL) chopped Ontario Tomato
- 1/2 cup (125 mL) chopeed Ontario Sweet Yellow Pepper
- 3/4 cup (175 mL) shredded Ontario Cheddar Cheese
- 3/4 cup (175 mL) diced Ontario Cooked Ham or Chicken
- 4 10-inch (25 cm) whole wheat flour tortillas
- 4 leaves Ontario Romaine Lettuce
- 2 tbsp (25 mL) mayonnaise
- 1/2 tbsp ( mL)Dijon mustard
- 1 tbsp (15 mL) rice vinegar
- Salt and pepper, to taste

Preparation:
In medium bowl, combine eggs, chopped lettuce, carrots, tomato, yellow pepper, cheese and ham.
Dressing: In a small bowl, combine mayonnaise, mustard, vinegar, and salt and pepper to taste; toss with vegetable mixture.
Place each tortilla on working surface. Line middle with lettuce leaf; top leaf with one-quarter of the vegetable mixture. Fold end over filling and roll side over filling.
Serve immediately or wrap well. Repeat with remaining tortillas.
