Greenhouse Tomatoes

Fresh Tomato and Dill Soup

This uncooked soup is easy to prepare and has the fresh taste of greenhouse or field tomatoes with dill.

Preparation Time: 10 Minutes
Cooking Time: Chill for 2 hrs. or longer
Servings: 4
Ingredients:
  • 3 large Ontario Greenhouse or Field Tomatoes, peeled and chopped
  • ½ cup (125 mL) plain low fat yogurt
  • 1 tbsp (15 mL) chopped fresh dill or 1 tsp (5 mL) dried dill
  • ¼ tsp (1 mL) salt
  • 1/8 tsp (0.5 mL) pepper
  • 2 tsp (25 mL) chopped green onions

    chopped Ontario Tomatoes
    fresh dill

Preparation:

In blender or food processor, purée tomatoes, yogurt, dill, salt and pepper until smooth.  Stir in green onions and chill at least 2 hrs.

Serve into 4 bowls; swirl in additional yogurt, if desired, and garnish with chopped tomatoes and fresh dill. 

Curried Tomato Soup Variation:
Replace 1 tbsp (15 mL) chopped fresh dill with ½ tsp (2 mL) curry powder and 1 tsp (5 mL) granulated sugar.  Replace dill garnish with chopped parsley.
