Alphabet Soup

When you're ready to pack your child's lunch, preheat vacuum bottle with boiling water for 5 minutes; drain. Bring the soup to its highest temperature before pouring it into the bottle. The secret to perfectly cooked pasta is to let it soften in the warm broth. Pack along whole grain crackers, milk and a shiny Ontario apple for a tasty lunch.

Servings: 4-1/2cups (1.25 L)
Ingredients:
  • 1 can (10 oz/284 mL) chicken broth
  • 1 Ontario Green Onion, thinly sliced
  • 1 cup (250 mL) diced Ontario Carrot
  • 1/2 cup (125 mL) diced Ontario Celery
  • 1/2 cup (125 mL) chopped cooked chicken
  • 1/3 cup (75 mL) minature alphabet pasta
Preparation:

In large saucepan over medium-high heat, combine chicken broth plus 1 can water, green onion, carrot, and celery; cover and bring to boil. Reduce heat to low; simmer, covered for 10 minutes or until vegetables are tender. Turn off heat. Stir in chicken and pasta; cover and let stand for 15 minutes or until pasta is tender.

Tip: Plan to make this soup when you have leftover cooked chicken.
