Maple Syrup
Maple Mustard Sweet Potatoes and Apples
This attractive side dish is excellent with turkey, ham or chicken. To highlight the mustard, use an old-fashioned grainy Dijon mustard.

Ingredients:
- 3 large Ontario Sweet Potatoes (about 2 lb/1 kg)
- 3 large Ontario Idared, Northern Spy or McIntosh Apples
- 2 tbsp (25 mL) butter
- 1/2 cup (125 mL) Ontario Maple Syrup
- 1/4 cup (50 mL) Dijon mustard
- 1/2 tsp (2 mL) each salt and pepper
- 2 cloves Ontario Garlic, minced (optional)
Preparation:
In saucepan of boiling water, cook unpeeled sweet potatoes until just tender. (Or pierce several times with fork; microwave at High for 8 to 10 minutes.) Let cool and peel. Cut into 1/4-inch (5 mm) thick slices; arrange in overlapping circles in shallow lightly greased 10-cup (2.5 L) casserole.
Core and slice apples into 1/2-inch (1 cm) wedges. In large skillet, melt butter over medium heat; cook apples, stirring, for 2 to 3 minutes or until slightly softened and lightly browned. Tuck among potatoes.
Combine maple syrup, mustard, salt, pepper and garlic (if using). Pour over potatoes and apples. (Casserole can be prepared to this point, covered and refrigerated for up to 1 day.) Bake in 350°F (180°C) oven for 30 to 40 minutes or until bubbling and hot. Spoon sauce over potatoes to serve.
