Peach and Honey Omelette

Ingredients:
  • 1/2 cup (125 mL) sliced Ontario Peaches
  • 1 tsp (5 mL) Ontario liquid honey
  • 1/8 tsp (.5 mL) vanilla
  • 2 Ontario Eggs
  • Cooking spray
  • 1 tbsp (15 mL) toasted sliced almonds (optional)
  • Icing sugar
Preparation:

Combine peaches, honey and vanilla in a small bowl; set aside. Whisk eggs in a small bowl.

Heat an 8-inch (20 cm) non-stick skillet over medium-high heat; spray with cooking spray. Pour in eggs. As mixture sets at edges, use spatula to gently push cooked portions toward the centre. Tilt and rotate the skillet to allow uncooked egg to flow into the empty spaces. Cook until bottom is set and top is almost set.

Spread peaches over half of the omelette; sprinkle almonds over peaches, if using. Fold the other half of the omelette over peaches. Tilt the skillet so omelette slides out and onto a plate.

Sprinkle with icing sugar. Serve immediately.

Serve for brunch or dessert.
