Rum and Rhubarb Compote

This quick and easy microwave recipe is great with frozen or regular yogurt and even delicious on French toast. Use fruit juice in place of rum if desired.

Preparation Time: 10 minutes
Cooking Time: 5 to 6 minutes
Servings: 2-1/2 cups (625 mL)
Ingredients:
  • 4 cups (1 L) chopped (1-inch/2.5 cm pieces) trimmed Ontario Rhubarb (about 1-1/2 lb/750 g)
  • 2/3 cup (150 mL) granulated sugar
  • 3 tbsp (45 mL) rum
  • 1 tsp (5 mL) grated orange rind
Preparation:

In 8-cup (2 L) microwaveable dish, combine rhubarb, sugar, 2 tbsp (25 mL) of the rum and orange rind. Cover with vented plastic wrap and microwave on High for 5 to 6 minutes, gently stirring once, or until tender. Stir in remaining rum. Let cool (mixture will thicken). Serve warm or at room temperature.

NOTE: Microwave recipes tested in a 700-watt microwave oven. Power level terminology in microwave ovens varies; check your owner's manual and use whichever word or number gives you the same percentages as in the recipe (High is always 100%). If your oven differs, cooking times may vary.
