Ingredients:
- 6 cups (1.5 L) chopped (1/2-inch/1 cm pieces) Ontario Greenhouse Rhubarb (about 12 large stalks)
- 1 cup (250 mL) granulated sugar
- 1/4 cup (50 mL) water
- 1-1/2 tsp (7 mL) freshly grated orange rind
- 1 tsp (5 mL) each of vanilla and cinnamon
Preparation:
In medium saucepan, bring rhubarb, sugar and water to simmer over medium heat, stirring until sugar dissolves. Simmer, stirring occasionally, until rhubarb is tender, about 10 minutes. Stir in orange rind, vanilla and cinnamon. Let cool. (Can be refrigerated in airtight container for up to 5 days.) To speed up cooling, transfer to container and refrigerate for 2 hours.
