Szechwan Pork and Apple Stir-Fry

Use a food processor to quickly prepare this deliciously different stir-fry dish.

Preparation Time: 20 to 30 Minutes
Cooking Time: 15 Minutes
Servings: 4 to 6
Ingredients:
  • 1 lb (500 g) lean pork, cut in 1/2-inch (1 cm) strips
  • 1 tbsp (15 mL) vegetable oil
  • 1 garlic clove, minced
  • 1 medium onion, coarsely chopped
  • 1 celery stock, sliced
  • 1 medium carrot, sliced
  • 6 medium mushrooms, sliced
  • 1 cup (250 mL) broccoli flowerets
  • 1 small green pepper, cut in chunks
  • 1/2 cup (125 mL) peanuts
  • 4 medium Ontario McIntosh Apples, unpeeled, cored
  • and cut in bite-size pieces
  • 1 tbsp (15 mL) cornstarch

  • Marinade:
  • 1/4 cup (50 mL) soy sauce
  • 2 tbsp (25 mL) brown sugar
  • 1 tbsp (15 mL) vegetable oil
  • 1 garlic clove, crushed
  • 2 tsp (10 mL) ground ginger
  • 1/2-1 tsp (2-5 mL) crushed chilies
Preparation:

Combine marinade ingredients in small bowl; add pork strips and set aside. Heat 1 tbsp (15 mL) oil in a wok or large skillet, over medium high heat. Add garlic and onion; stir-fry for 1 minute. Add meat with marinade; stir-fry about 5 minutes or until pork is almost cooked. Add carrot, celery and mushrooms; stir-fry 1 to 2 minutes. Add broccoli, green pepper and peanuts; stir-fry 1 to 2 minutes. Add apples; stir-fry 1 to 2 minutes.

Sprinkle cornstarch over mixture and stir well for 1 to 2 minutes, until sauce is thickened.
