Caesar-Style Julienne Salad
This recipe offers all the traditional Caesar salad flavour plus
the added goodness of protein-rich peameal bacon and Swiss cheese.

| Dressing: |
|
| 1 |
clove Ontario Garlic, minced |
| 1 |
egg yolk |
| ½ tsp (2 mL) |
hot mustard |
| ½ tsp (2 mL) |
anchovy paste (optional) |
| dash |
Worcestershire sauce |
| 2 tbsp (25 mL) |
wine vinegar |
| 1/3 cup (75 mL) |
vegetable oil |
| 1/4 tsp (1 mL) |
salt |
| |
freshly ground pepper |
| Salad: |
|
| 1 |
head Ontario Romaine Lettuce, in
bite-size pieces |
| ½ lb (200 g) |
well cooked bacon, in small pieces |
| 2 cups (500 mL) |
Swiss cheese, shredded |
| 1 cups (250 mL) |
croutons |
| 3 tbsp (50 mL) |
grated Parmesan cheese |
Dressing:
Combine garlic, egg yolk, mustard, anchovy paste (is using),
and Worcestershire sauce in blender or small bowl. Slowly add wine
vinegar while blending or whisking, and then oil, slat and pepper.
Salad:
In large bowl, combine salad ingredients. Add dressing and toss
well. Serve immedialetly.
