Pasta with Cauliflower, Broccoli and Potatoes

Lots of vegetables make this interesting as well as delicious.

 
Preparation Time: 10 minutes
Cooking Time: 20 minutes
  Serves 6
 
1 lb (500 g) penne noodles
2 Ontario Potatoes, peeled and cut into 1-inch (2.5 cm) cubes
1 cup (250 mL) Ontario Broccoli florets
1 cup (250 mL) Ontario Cauliflower florets
2 tbsp (25 mL) olive oil
2 cloves Ontario Garlic, chopped
Pinch red pepper flakes (optional)
1 Ontario Onion, chopped
1/4 lb (125 g) Polish sausage or ham, diced
1 can (28 oz / 796 mL) plum tomatoes, puréed
1 tsp (5 mL) salt
1/2 tsp (2 mL) pepper
1/2 cup (125 mL) grated Parmesan cheese
2 tbsp (25 mL) chopped fresh Ontario Parsley

Bring large pot of salted water to boil. Add pasta and potatoes; cook 7 minutes. Add broccoli and cauliflower; cook until pasta is tender yet firm, about 5 minutes. Drain well.

Meanwhile, heat oil in deep skillet. Add garlic, red pepper flakes and onion; cook 5 minutes. Add diced sausages, tomatoes, salt and pepper. Cook 5 minutes, uncovered, until thickened. Combine with pasta mixture. Toss with cheese and parsley. Taste and adjust seasoning if necessary.
