Pasta with Cauliflower, Broccoli
and Potatoes
Lots of vegetables make this interesting as well as delicious.

| 1 lb (500 g) |
penne noodles |

Ontario Potatoes, peeled and cut
into 1-inch (2.5 cm) cubes |
| 1 cup (250 mL) |
Ontario Broccoli florets |
| 1 cup (250 mL) |
Ontario Cauliflower florets |
| 2 tbsp (25 mL) |
olive oil |

cloves Ontario Garlic, chopped |
| Pinch |
red pepper flakes (optional) |

Ontario Onion, chopped |
| 1/4 lb (125 g) |
Polish sausage or ham, diced |
| 1 |
can (28 oz / 796 mL) plum tomatoes,
puréed |
| 1 tsp (5 mL) |
salt |
| 1/2 tsp (2 mL) |
pepper |
| 1/2 cup (125 mL) |
grated Parmesan cheese |
| 2 tbsp (25 mL) |
chopped fresh Ontario Parsley |
Bring large pot of salted water to boil. Add pasta and potatoes;
cook 7 minutes. Add broccoli and cauliflower; cook until pasta is
tender yet firm, about 5 minutes. Drain well.
Meanwhile, heat oil in deep skillet. Add garlic, red pepper flakes
and onion; cook 5 minutes. Add diced sausages, tomatoes, salt and
pepper. Cook 5 minutes, uncovered, until thickened. Combine with
pasta mixture. Toss with cheese and parsley. Taste and adjust seasoning
if necessary.
