Serves 6 |
| 1- ½ cups (375 mL) |
cooked Ontario White Pea Beans or a mixture
of Ontario Coloured Beans |
| 1- ½ cups (375 mL) |
diced Ontario Greenhouse Cucumber |
| 1 cup (250 mL) |
diced, seeded Ontario Greenhouse Tomatoes |
| ½ cup (125 mL) |
diced sweet green pepper |
| ½ cup (125 mL) |
Ontario crumbed feta cheese |
| 1/3 cup (75 mL) |
diced red onion |
| ¼ cup (50 mL) |
chopped pitted black olives |
| 2 tbsp (25 mL) |
red wine vinegar |
| 1- ½ tsp (7 mL) |
dried oregano |
| ¼ tsp (1 mL) |
each salt and freshly ground pepper |

whole wheat pitas |

red or green leaf lettuce leaves |

tzatziki sauce, optional |
In a bowl, combine all ingredients except pitas, lettuce
and tzatziki (may be made several hours in advance). Place
lettuce leaves on top of flat pita. Spoon filling in the middle.
Roll up sides of pita with bottom of pita smaller than the
top. Wrap bottom of pita with wax paper for easy handling.
Serve with tzatziki on the side. Alternately, cut pitas in
half, line each half with lettuce and fill with bean mixture.
