Makes 4 cups (1L) |
| 2 tbsp (25 mL) |
vegetable oil (such as canola) |

seeded and diced small sweet Red Pepper |

| 1 cup(250 mL) |
diced Ontario Carrots |
| 1/2 cup(125 mL) |
chopped Ontario Green Beans |
| 1 tbsp(15 mL) |
minced Ontario Garlic |
| 1-1/4 cup (300 mL) |
water |
| 3 tbsp (45 mil) |
cider vinegar |
| 1 (5 1/2 oz./156 ml) |
can of tomato paste |
| 1 cup(250 mL) |
cooked Ontario White Pea Beans |
| 1 cup (250 mL) |
cooked Ontario Red Kidney Beans |
| 2 tbsp (25 mL) |
finely chopped pickled or fresh jalapeno peppers

| 1/4 cup (50 mL) |
finely chopped parsley |
| 1 tsp (5 mL) |

In a large saucepan or Dutch oven, heat the oil over medium
heat. Sauté the onion, peppers, carrots and green beans,
stirring occasionally until tender, 8 to 10 minutes. Add the
garlic and cook 1 minute. Add the water, vinegar, tomato paste,
bring to a boil, reduce heat, cover and simmer for 15 minutes.
Stir in the beans, jalapeno peppers, parsley, salt and pepper
to taste. Place half of the mixture in a food processor and
process until smooth. Return to the pan and stir to combine.
Store in glass jars in the refrigerator; can be made several
days in advance. Serve with crackers or crostini.
Preparing Dry Beans: Use a 3:1 ratio of water to beans.
Method 1: Soak beans overnight.
Method 2: Boil beans for 2 minutes and let stand for
1 hour.
Drain and use according to recipe.
