Pepperpot Peach Relish

Peppers accent sweet luscious peaches to produce a tangy, sweet condiment that looks lovely and tastes even better served with cheese, grilled entrees and sandwiches. Adjust the heat of this trendy condiment by adding or decreasing the proportion of hot to sweet peppers. This recipe requires Bernardin® No Sugar Needed Fruit Pectin, a unique product that gels mixtures with less or no sugar.

 
Preparation Time: 15 minutes
Cooking Time: 10 minutes
  Yields 6 - 250 or 236 ml jars
2-1/2 cups (625 mL) prepared Ontario Peaches, about 4 peaches
3/4 cup (175 mL) finely diced, seeded fresh Ontario Peppers (1/2 cup/125 mL Sweet Peppers; 1/4 cup/50 mL hot)*
1/4 cup (50 mL) finely diced Ontario Onion
3/4 cup (175 mL) white vinegar
1 pkg (49 g) Bernardin® No Sugar Needed Fruit Pectin
3 cups (750 mL) granulated sugar

Place 6 clean 250 or 236 mL mason jars on a rack in a boiling water canner; cover jars with water and heat to a simmer (180°F/82°C). Set screw bands aside; heat SNAP Lids in hot water, NOT boiling (180°F/82°C). Keep jars and SNAP Lids hot until ready to use.

Blanch, peel and pit peaches; cut peach halves into thin 1/8 inch (3 mm) slices. Measure 2 1/2 cups (625 mL); set aside. Combine peppers, onion and vinegar in a large stainless steel saucepan. Whisk in No Sugar Needed Fruit Pectin until dissolved. Stirring occasionally, bring mixture to a full rolling boil. Add sugar and return mixture to a boil that cannot be stirred down. Add peaches, return to a boil and boil 1 minute. Ladle relish into a hot jar to within 1/4 inch (0.5 cm) of top rim (headspace). Using a non-metallic utensil, remove air bubbles. Wipe jar rim removing any stickiness. Centre SNAP Lid on jar; apply screw band securely & firmly until resistance is met -- fingertip tight. Do not overtighten. Place jar in canner; repeat for remaining relish. Cover canner; bring water to a boil. Process -boil filled jars - 10 minutes. Remove jars without tilting. Cool upright, undisturbed 24 hours; DO NOT RETIGHTEN screw bands. After cooling check jar seals. Sealed lids curve downward. Remove screw bands; wipe and dry bands and jars. Store screw bands separately or replace loosely on jars, as desired. Label and store jars in a cool, dark place.
